a great vineyard. This shows off spicy plums and chocolate-covered

Eric Rindal, a Walla Walla Valley pioneer who is closing
in on his winery’s 20th anniversary, takes advantage
of fruit from a world class vineyard. Your nose will pick
out aromatic cedar shavings and vanilla spice. The flavors
are rich, and the tannins are well managed, not aggressive.
Raspberry, red plums and bright cherries meld in a creamy
richness with a little bittersweet chocolate. Enjoy with
steak, but don’t leave it on the grill long.

ruby in color, with lovely aromas of black cherries, mixed
berries and subtle oak. These repeat on the palate with
a dash of cassis for interest. Elegant, balanced, with noticeable
but rounded tannins, this one will benefit from a few years
of aging.

This wine is a milestone for winemaker Eric Rindal. Eric
always makes good quality Cabernets and blended reds but
the 2000 Waterbrook Ciel du Cheval is a showpiece. This
classic blueberry and cassis flavors that seem omnipresent
in wines from this vineyard combine with tobacco leaf and
mocha scents to make one truly expressive wine.
